Why Beer Enthusiasts Flock to Denver, Colorado

Beer enthusiasts have every reason in the world to flock to Denver, Colorado like moths to a flame. In 2007, Colorado surpassed California to become the top beer-producing state in America per capita with 115 breweries, and this beer lover’s paradise wears its badge of honor well. The average adult consumed 30 gallons of beer per person in 2009. John Hickenlooper, former Mayor of Denver, is co-founder of Downtown Denver’s popular Wynkoop Brewery. With spring here and summer right around the corner, the amount of delicious fresh produce available at the farmer’s market should definitely be taken advantage of. What better way to welcome the new seasons than by breaking out the grill. If you are anything like me you are excited to savor the warm weather and to bring your family’s favorite dinner ideas  to life on the grill. The only not-so-fun part of preparing a spring or summer grilled feast: the hours and hours of preparation and cooking that is usually involved. Easy grilling recipes  are hard to find, that is why I am absolutely in love with this Santé Fe Chicken Packet recipe. This delicious meal is ready in only 30 minutes and requires little prep time and 0 clean-up, just toss the aluminum foil packets away when finished!

Ingredients

  • 1 can (15 oz. each) Rosarita® Premium Whole Black Beans, drained, rinsed
  • 2 cups frozen whole kernel corn
  • 1 can (10 oz. each) Ro*Tel® Original Diced Tomatoes & Green Chilies,drained
  • 1/2 teaspoon ground cumin
  • PAM® Original No-Stick Cooking Spray
  • 4 boneless skinless chicken breasts (5 oz. each)
  • 1/2 cup shredded reduced fat Mexican cheese blend

Instructions

  1. Preheat outdoor grill to medium-high heat according to manufacturer's directions.
  2. Stir together beans, corn, drained tomatoes and cumin in medium bowl.
  3. Place four 18x12-inch pieces of heavy foil on counter.
  4. Spray each with cooking spray.
  5. Place 1 breast in center on each piece of foil.
  6. Spoon 1/4th bean mixture over chicken for each packet.
  7. Bring up short sides of each foil packet and double fold top.
  8. Double fold both ends to seal each packet, leaving space for steam to gather.
  9. Place packets on grate of covered grill.
  10. Grill 15 to 20 minutes or until chicken is no longer pink in centers (165°F).
  11. Carefully open packets; sprinkle 1/4th cheese on top of each breast.
  12. Close foil and let stand 2 minutes or until cheese melts.
